Abstract The following mycotoxins are considered: citrinin, ochratoxin A, patulin, sterigmatocystin, aflatoxins B1, B2, G1 and G2. Methods proposed for eliminating the carcinogenic potential of these compounds include: treatment using sodium hypochlorite, ammoniation, and treatment with potassium permanganate under alkaline conditions that does not generate mutagenic species.
