Abstract Flour is the primary cause of occupational asthma in France. Bakers are constantly exposed to flour dust in the course of their job and are the most affected. Respiratory allergies (asthma and rhinitis) are particularly common in this occupation and can arise at any given time during bakers' careers. Among workers notifying these diseases, one in four is a baker.
