Abstract Disinfection and cleaning represent key activities in the food industry. In order to make these operations easier and to ensure their effectiveness, their requirements and constraints should be integrated as early as possible into the design of the premises. This information sheet summarizes the principles to be followed for an intelligent design of the premises so as to ensure better safety in relation to occupational hazards and food contamination.
