Resumen Review of the rules of hygiene, epidemiological principles and French regulations which the occupational physician must keep in mind. These provisions bear on medical examinations, required vaccinations, prevention of toxicoses or infections due to contamination of foods (hygienic habits of personnel, bacteriological monitoring of foods, safe and hygienic use of places and equipment). The role of the occupational physician in preventing contamination of foods is emphasised (detection of carriers of Salmonella, systematic screening for Staphylococcus and infectious or parasitic agents such as amoebae, hepatitis A virus and the agents of typhoid and paratyphoid fevers).
