Abstract The preparation of fresh vegetables for sale to the public is of increasing importance in the food industry, currently growing at an annual rate of about 10%. In order to ensure that the products supplied are safe for consumption, the vegetables are disinfected in chlorinated water prior to packaging. Atmospheric concentration of chlorine or its derivatives was measured in six vegetable packing establishments. Most of the pollution was in the form of mono- and dichloramines, and to a lesser extent nitrogen trichloride. The study also revealed higher pollution levels in firms which used recycled water.
