Title Enzyme allergy: Standards for airborne exposure in the workplace?

Abstract Microbial enzymes are used in the detergent and food industries. They are considered to be a risk factor in the development of occupational asthma. A number of studies have shown that sensitization may occur at concentrations lower than the present Dutch exposure limit of 60ng/m3. Dose-response relationships published for the fungal enzyme alpha-amylase are used to show that this enzyme can induce specific IgE responses and symptoms of allergic respiratory diseases at mean exposure levels of less than 1 to 2ng/m3. Further studies are needed to clarify whether sensitization was due to these mean levels or to repeated short peak exposures of 10 to 100ng/m3 or more which are most likely to occur with some frequency. The enzyme alpha-amylase is used in bakeries to improve the baking quality of the dough. It is derived from the mould Aspergillus oryzae.
