Abstract This study was carried out in a salami factory following the incidence of various respiratory ailments among the workers. Investigations included plant inspections and atmospheric sampling. It was found that workers were at risk of inhalation exposure of moulds. Local exhaust ventilation on the brushing and flouring machine should allow reducing the exposure to bioaerosols. Regular surveillance of the workers' pulmonary function is recommended.
