Abstract Grease bacterial degradation fountains consist of a tank containing a surfactant inoculated with a mixture of bacteria. Monitoring the microbiological flora of several fountains for one year allowed assessing the biological hazards. Bacteria quantification gave a concentration of 3.4 x105 CFU/mL. Microorganism identification revealed the presence of moulds and numerous bacterial species different from those initially seeded in the fountains. These microorganisms could originate from the working atmosphere or the personnel. A number of prevention measures are recommended, based on the potential risks of the identified germs and the type of exposure when using the tanks.
